Where My Time gets it speciality coffee from

Our coffee suppliers Climpson & Sons are pioneers in the evolving London speciality coffee scene. Their aim is to continue sourcing, roasting and crafting the finest coffees from the heart of East London. Their range of espresso blends and single origin beans reflect what they do: a boundless exploration into the possibilities of flavour.

Thanks to great experience, a genuine love for the industry and dedication to their craft, they can manage as many variables as possible to provide high quality coffee.

Climpson’s take work pretty seriously; with an ever expanding range of brew methods out there, they are constantly searching for the best flavour profiles and extraction techniques to understand how roasts react in coffee-making equipment. Their sourcing philosophy is primarily directed at flavour and quality. Their ethos towards sustainability and ethical sourcing protocols ensure the coffees they roast not only have character but a transparent story. They reward quality by paying a higher price to the producer.
At My Time we want to be able to satisfy the increasingly-educated palates of coffee-drinkers, We are part of a growing lifestyle where coffee and the café culture is not defined by the big high street brands anymore and the specialty coffee market is bringing to those discerning coffee drinkers a better tasting, ethically sourced and sustainable coffee product. We use single estate beans for the best quality.

The latest development at the end of 2013 at Climpsons was the purchase of a Loring SmartRoaster. This roaster reduces greenhouse gas emissions and energy consumption by up to 80%. The Loring recycles air inside the roaster, creating consistency year around and all leading to a cleaner cup offering.

Monitoring the roasting process. Hot air roasts the beans not direct heat sealing in flavour, reducing bitterness and giving a wonderful chocolate colour to the beans.

My Time uses The Baron

The Baron Espresso is a punchy and well balanced espresso that works great with milk. The emphasis is on sweetness, with a full-bodied mouth feel and nutty toffee sweetness. This coffee extracts a lovely crema, inviting straight espresso lovers and milk-based drink fans alike.

As an espresso it has a rich body and notes of baker’s chocolate and pecan. Add milk and you get all of the above plus hints of caramel and dried fruits.

Our suppliers have teamed up with the head cupper at Daterra to develop a unique and interesting Brazil Single Estate. We can trace our coffee to the three lots it was grown from in the Cerrado region in the state of  Minas Gerais, one of the main producers of coffee and milk in the country. Daterra was the first sustainable coffee farm in Brazil and are transparent in their practice of this. In 2015 they won a Sustainability Award.

The results of years of agronomical and processing research conducted by this forward-thinking farm are the wonderful arabicas grown and processed there. The flavours are clean and the “natural” process used retains a high level of sweetness in the finished green beans, certainly more than the traditional processing used throughout Brazil. Daterra coffees have been showcased in many World Barista Championships, as well as awarded Best Coffee from Brazil on the cupping for Quality by Rainforest Alliance in 2005 and 2008.

Daterra are committed to developing sustainable practices in order to put economic objectives side by side with conservation, by preserving native forests, wildlife and waterfalls; treating and recycling the used water and educating local communities about the importance of ecology. Daterra also applies its philosophy with their commitment to the community for example, by profit sharing, health care, transportation, and child day care.
